CHEESY HAM AND VEGGIE QUINOA BAKE

Mix quinoa, spinach and mushrooms together in a baking dish.
Mix chicken broth, garlic, salt, rosemary and pepper together and pour over quinoa mixture and stir to combine.
Top with diced ham and shredded cheese.
Bake for 30 40 minutes or until casserole is heated through and cheese is melted.
Garnish with fresh parsley if desired.
