Tailgating may be a social gathering serving an informal meal before cheering on a favorite sports team, yet, here in the South, tailgating is more than a casual social meeting, it is a religion. Southerners give a whole new meaning to tailgating as we gather to celebrate our team, for we must “Go Big or Go Home’ in all aspects of the term Southern Hospitality. 


But why should our tailgating be mediocre when we can add an extra dash or two to make a fantastic tailgate experience. One way to dazzle your next tailgate crowd is with this amazing Maple/Bacon Chipotle Onion Relish Smoked Sausages.


I had you at bacon right?


There is nothing better than the smell of the sizzling of the grill, and the sound of fans in the background, as you sink your teeth into a warm and juicy grilled Petit Jean Smoked Sausage topped with this fantastic Maple & Bacon Chipotle Onion Relish. 


Y’all, this relish is what tailgating was made for! It’s sweet, yet spicy for the perfect kick. It is the ideal topping over sausages, or any other meat for that matter. It’s a quick and easy garnish to add to your grill feast that will leave you with the title of king or queen of “Tailgate Land”. With smoky flavor added to Petit Jean Hickory Smoked Bacon, paired with the tang, yet spicy chipotle peppers in the Adobo sauce, perfectly balanced out with the sweetness of the brown sugar and maple extract, this relish will definitely make you’re fans yelling for more.

Ingredients:

*prep time 10-15 minutes


Instructions:

*cook/grilling time 20-30 minutes

  1. Grill or Smoke Sausages as you prefer.
  2. Cook the bacon, maple extract and liquid smoke over medium high heat until crispy. 
  3. Remove the bacon from the grease and allow it to drain on paper towels. 
  4. Add the diced onion, Chipotle peppers, vinegar, brown sugar and bacon to your food processor and blend.
  5. For a chunkier style, give your processor just a few good spins, but for a more blended style, I suggest you use the puree feature.
  6. Top your sausages with your relish, pair with a side and enjoy!


*Liquid smoke is optional
