Petit Jean bologna is flavorful and has a great texture. It satisfies that comfort food craving for me as it does for many people.
I can recall having bologna sandwiches and chocolate milk as a child, perched in front of the tv watching The Price is Right.
I imagine bologna also made a regular appearance in my Strawberry Shortcake lunchbox.
Fried bologna, however, was not something I experienced until I was in my mid 30s. Fried bologna, really any fried foods, we just not as common up north as they are here in the south.
For years I had seen fried bologna on restaurant menus in Arkansas, but I shied away from it. I guess there was a small part of me that might have even felt that I was too good for fried bologna. Well the joke was on me because once I finally convinced myself to try a fried bologna sandwich, I was hooked. I began seeking out fried bologna on restaurant menus and finally, I began making it at home.
My new favorite homemade breakfast sandwich is the Fried Bologna Biscuit. Delicious farm-fresh eggs, meaty bologna and melty cheese on a tender buttery biscuit. What could be better than that?
The best part is that they are easy to prepare and will satisfy a hungry family. I serve them with a heaping pan full of home-fried potatoes and orange juice.
Splash of Milk
6 slices of American cheese
Salt and pepper
1.) Prepare your favorite biscuit recipe.
2.) While the biscuits are baking, crack six eggs into a medium bowl. Add a splash of milk, salt and pepper and whisk until the eggs are light in color and well combined.
3.) Heat a large pan over medium-high heat. Add a pat of butter. When the butter has melted add half of the eggs. Cook omelette style and divide into 6 equal sections. Place the cooked eggs on warm plate at the back of the oven to keep warm. Repeat the process with the remaining eggs.
4.) Remove the cooked biscuits from the oven and lower the oven to 250 degrees.
5.) Slice each biscuit in half and top with half a slice of cheese and one section of egg. Fold the egg if necessary to fit on the biscuit.
6.) Add more butter to the same pan you cooked the eggs in and fry 12 pieces of bologna in batches as necessary.
7.) Slice each piece of bologna in half and place both halves on the biscuit with the cheese and egg. Place biscuit tops back on.
8.) Place all of the biscuit sandwiches onto the baking sheet and cover lightly with foil. Return to the oven for 3-5 minutes to re-warm everything and to allow the cheese to melt.
9.) Serve with home-fried potatoes and orange juice.
