This is a homemade version of a fast food breakfast favorite – the breakfast sandwich with delicious syrupy pancakes serving as the bread! No rules here, use a pancake mix, grandma’s from scratch buttermilk pancakes, even whole grain pancakes for something a little more on the healthy side. Easy to make just one, or enough to serve a crowd.


BREAKFAST "PAN"WICH


INGREDIENTS - 1 serving

Parchment paper, about 8” square

2 pancakes, about 3” diameter each
Syrup, Maple or your favorite pancake syrup
1 egg
Petit Jean Ham Slice(s), about 3 oz total


INSTRUCTIONS

  1. Place the pancakes on the paper, with the ‘insides’ facing up.

  2. Drizzle on a little syrup, just enough for the pancakes to soak up.

  3. Fry an egg, breaking the yolk to make sure it cooks thru.

  4. Pan fry the ham also if you like (recommended for the best flavor).

  5. Place the egg, folder over, and ham between the pancakes and serve on the parchment paper.
