Nothing says summer to me quite like a BLT. The crunch of crispy, salty Petit Jean bacon against a juicy tart homegrown tomato is one of the best things in the world, in my opinion. What could be better? Not much, except combining it with another summer favorite, homemade guacamole!
This is a great dip, fresh and full of flavor. The bacon and tomato lend heartiness to the guacamole, and I’m certain I would be happy with a bowl of this and some chips for dinner on most warm summer evenings. You can also make it pretty for a party by garnishing it with some diced onion, tomato, bacon, and a sprig or two of cilantro.
4 ripe avocados
¼ onion, diced
juice of 1 lime
2 tablespoons chopped fresh cilantro
1 teaspoon garlic powder
¾ teaspoon cumin
½ teaspoon salt
1 tomato, diced
4 slices Petit Jean bacon, cooked crisp and crumbled
1.) Mash the avocado, onion, lime juice, cilantro, garlic, cumin, and salt together in a bowl. Taste and adjust seasonings if needed.
2.) Stir in tomato and crumbled bacon and enjoy immediately.
