1 pkg Petit Jean Polish Sausage (cut each link into 5 pieces)
1 pkg Petit Jean Arkansas Style Sausage (cut each link into 5 pieces)
1 Red Bell pepper (cut in bite-size pieces)
4 ears of Fresh Corn (Cut into 5-6 coin like pieces)
1 lb of baby potatoes (cut in half if potatoes are larger)
1 Small onion (Sliced)
2 Medium zucchini (Sliced)
6 pieces of foil approximately 1 ½ feet long (12’roll)
¼ C Olive oil
Chopped or granulated garlic
Salt and pepper
Place the baby potatoes in the microwave (5mins) or on the grill (10 mins) while you are prepping the other fixings.
Place 6 pieces of foil out on work area.
After the potatoes are par-cooked toss them with olive oil, salt, pepper and garlic then place an equal amount of potatoes on each section of foil.
Toss the zucchini, onion, and peppers in remaining olive oil then put equal parts on each foil section. Place equal parts of each sausage in the foil packets.
Finally, pull the longest piece of foil together and roll them down then do the same thing to the ends. Taking care to make sure all seams are facing up.
Place the packets on the grill or in the oven and cook until the potatoes are fork tender. Enjoy!
