Grilling season is one of my favorite times to experiment – so I grabbed some of the ingredients of a shrimp boil, put them in foil packets and hit the grill. Unfortunately, my local store didn’t have uncooked shrimp when I shopped – so I bought cooked and backed off of the cooking time a little.
INGREDIENTS
1 lb. package of Petit Jean Arkansas Style Sausage
3 T Old Bay Seasoning (I used the lower salt version)
1 stick of unsalted butter
Fresh corn
Red potatoes
Shrimp (uncooked would work better)
INSTRUCTIONS
If your shrimp is uncooked, peel and devein it.
Slice the sausages into about 1 ½ inch pieces.
Dice the potatoes into about 1 inch slices and cut the corn cobs into thirds.
Drop the corn and potatoes into boiling water for about ten minutes, then drain.
Melt the butter – melted, not clarified – and add the Old Bay seasoning. In a large bowl, toss the cooked corn and potatoes with the sausage and shrimp in the butter/Old Bay seasoning.
I used heavy aluminum foil, and made five packets. Cut about a square foot piece of foil for each packet, the divide the sausage/corn/potatoes/shrimp evenly across those. Fold it closed and cover the folded end with another square foot piece of heavy aluminum foil.
Grill over medium heat. If you’re using cooked shrimp, about five minutes per side; if uncooked shrimp, about 8-10 minutes on one side and five on the other.
