Bacon Tomato Pie




One of the best things about summers in the south are fresh garden tomatoes. And nothing goes better with tomatoes than Petit Jean BACON. 



BLT's are a staple, but there are many other ways to enjoy your garden fresh tomatoes. One of which is the unexpected, beloved, southern Tomato Pie. 


This savory pie is a tomato lovers dream. Layered with tomatoes, basil, bacon and cheese, it is sure to become a summer favorite. 




INGREDIENTS


  • 1 9-inch pie shell (frozen or homemade)
  • 3-4 tomatoes, thinly sliced, with excess juices blotted with paper towel)
  • 1/2 teaspoon kosher salt
  • 1/4 cup sliced basil 
  • 1 cups grated sharp cheddar cheese
  • 1 cup grated Mozzarella cheese
  • 1/2 cup Petit Jean Bacon 
  • 1/2 cup mayonnaise
  • 1 teaspoon of Frank's Hot Sauce or Tabasco sauce
  • Freshly ground black pepper

DIRECTIONS

  1. Pre-bake the pie shell 10 minutes or until lightly browned.

  2.  Salt and drain the tomatoes: Lightly salt the sliced tomatoes and set them in a colander over a bowl to drain. Squeeze moisture out with paper towel. 

  3. Layer pie shell with tomatoes, basil and bacon.

  4.  In a medium bowl, mix together the grated cheese, mayonnaise, hot sauce, and freshly ground black pepper.

  5. Spread cheese mixture on top of pie.

  6. Bake in oven at 350°F for about 30 to 45 minutes, or until brown and bubbly.
