BLT's are a staple, but there are many other ways to enjoy your garden fresh tomatoes. One of which is the unexpected, beloved, southern Tomato Pie.
This savory pie is a tomato lovers dream. Layered with tomatoes, basil, bacon and cheese, it is sure to become a summer favorite.

Pre-bake the pie shell 10 minutes or until lightly browned.
Salt and drain the tomatoes: Lightly salt the sliced tomatoes and set them in a colander over a bowl to drain. Squeeze moisture out with paper towel.
Layer pie shell with tomatoes, basil and bacon.
In a medium bowl, mix together the grated cheese, mayonnaise, hot sauce, and freshly ground black pepper.
Spread cheese mixture on top of pie.
Bake in oven at 350°F for about 30 to 45 minutes, or until brown and bubbly.
