Looking for a quick, easy and delicious way to get a family-friendly meal on the table? This adaptation of an old Pillsbury Bake-Off recipe has been a favorite in our family for many years.


We especially love it as a way to celebrate St. Patrick’s Day in a semi-traditional way by using thinly Petit Jean Pastrami and Royal Ham. But you can use whatever combination of meats and cheeses that suits your fancy, perhaps adding in some classic shaved corned beef or peppered beef. 


While I typically make it using Crescent Rolls or Crescent Sheets,  readymade puff pastry is another way to “fancy up” this dish for your spring time festivities. Instead of making it in a pizza pan, I use a small baking sheet, cut the puff pastry sheets into small squares, and fill as for a pocket sandwich, using a bottom and top layer of pastry. They bake up beautifully and will delight your family and friends. The puff pastry will yield about 4 servings, depending upon size.


Served alongside a spring green salad, this sandwich makes a meal your family and friends are sure to enjoy.

6-8 servings


INGREDIENTS

  • 2 8-ounce cans Crescent dinner rolls (sheets may be adapted)

  • 8 to 12 ounces thinly sliced Petit Jean ham, pastrami, peppered beef, corned beef or a combination  

  • 6 – 8 ounces Swiss or mozzarella cheese, grated or sliced

  • 1 cup sauerkraut, well drained and squeezed dry

  • 1/2 teaspoon caraway seed

  • 1/2 teaspoon sesame or poppy seed

DIRECTIONS

    1. Heat oven to 400°F.

    2. Separate 1 can of dough into 4 rectangles. Place in 12-inch pizza pan or 13x9-inch pan that has been lightly sprayed with nonstick spray; press over bottom and 1/2 inch up sides to form crust. Firmly press perforations to seal.

    3. Layer meats, cheeses and sauerkraut over dough. Sprinkle with caraway seed.

    4. Separate second can of dough into 8 triangles. Arrange triangles spoke-fashion over filling with points toward center.  I twist the middle points together somewhat. Do not seal outer edges of triangles to bottom crust. Sprinkle with sesame or poppy seed.

    5. Bake at 400°F. for 15 to 25 minutes or until golden brown.

    6. Cool slightly before cutting to serve.

    7. Serve with your favorite mustard or Thousand Island Dressing, if desired.

    8. This can be reheated at 375 degrees for 15 minutes, covered with foil.
